Hearty Black Beans & Rice

Rice:

3/4 cup brown rice

1 1/2 cups water

 

Beans:

1 (15.5oz) can black beans (drained and rinsed)

1/4 cup salsa

1/4 cup water

1 T. chopped cilantro

 

For the rice: Add brown rice and water to a medium sauce pan.  Bring to a boil and lower heat to warm, cover, and cook for 35-40 minutes or until tender.  If you have a rice cooker, you can use this as well!

For the beans: In a second medium sauce pan, heat salsa, 1/4 cup water, and black beans. Bring to a simmer and lower heat.  Cook on low for 10 minutes, and stir in cilantro.

Serve beans over rice and enjoy!

**Pro tip: ALWAYS drain and rinse canned beans before using them in recipes.  This will reduce sodium and help you create healthy and satisfying dishes
