Online Training Modules

In 2014, the City of Philadelphia issued Executive Order 4-14, establishing citywide nutrition standards (Standards) for foods and beverages purchased, prepared or served by City agencies (including contracted organizations).

Nutrition standards are an evidence-based strategy to ensure meals, beverages and snacks align with the latest dietary guidance. 

They are a model for other large institutions and employers, and send a market signal to suppliers to provide competitively priced healthy food options.  The Philadelphia Department of Public Health (PDPH) has developed online training modules to offer food procurement staff (City staff who purchase food), kitchen managers and food preparation/purchasing staff (those who develop menus, purchase, prepare and serve the food), and food vendors (those who provide/sell the food to City departments) the information needed ​to comply with Standards implementation. Select the module that best aligns with your role.


Module 1: Training for Kitchen & Food Preparation / Purchasing Staff

This presentation is designed to inform you of the Philadelphia Nutrition Standards and what you need to know to implement them in your foodservice program. This training is designed for kitchen managers and food preparation and purchasing staff to provide greater understanding for what to consider as part of your purchasing, menuing and food preparation decisions.


Module 2: Training for Procurement Staff

This presentation is designed to inform you of the Philadelphia Nutrition Standards and what you need to know to implement them into your work. This training is designed for food procurement staff to provide greater understanding for what to consider as part of your food purchasing and contracting decisions.


Module 3: Training for Food Vendors

This presentation is designed to inform you of the Philadelphia Nutrition Standards and what you need to know to ensure the products you are selling to City agencies and supported programs comply. This training is designed for food vendors to provide greater understanding for what to consider when you are responding to product level bids, and/or selling items to City programs and agencies.
